Sweet and sour chicken with egg fried rice .. Tasted better than the local takeaway

Sliced spring onions to garnish.

Fry chicken in low cal spray when half cooked add onion pepper and carrots, cook for 4 min stirring continuously.

While that's cooking make the sauce.

Mix pineapple juice with garlic ,cornflour, tomato purée,red wine vinegar, soy sauce and 100ml of water.

Once chicken is cooked and the veg is slightly soft but the carrots are still a little crunchy add the sauce to the chicken and veg.

Once the sauce has thickened add the pineapple chucks cook for further 2 min serve and garnish with spring onions.

Cook the rice until cooked once cooked put into a drainer and cool over cold water .. Until cold !!

Meanwhile beat 2 eggs with 2 tbsp of water

Spray non stick frying pan or wok with low calorie spray heat the pan until almost smoking... add the cold rice make sure it doesn't stick keep stirring.. Heat till hot 3 min ish add the pea and keep stirring add the soy sauce and pepper stir all together.. Push it all to 1 side of the pan .. Add the beaten eggs to the other side leave to set for 10 seconds then start to stir the egg (like your making scramble eggs) once cooked mix into the rice keep stirring it all together and your done.
