Christmas porridge



Add the rice to the pot of boiling water and cook slowly until most of the water is absorbed. Add milk, stirring constantly. Turn heat to low. Cover and cook slowly until rice is tender, stirring occasionally. Scoop a mound of rice porridge in each bowl, top with a pat of butter (optional), and serve with plenty of cinnamon-sugar and a small pitcher of milk on the side.
